CHICKEN, MUTTON, BEEF SUKKA (PINTOS SPECIAL)

Meat -1kg net

(1) Masala to grind (fry all the ingredients in very little oil) (can powder it in a mixer grinder)

Dry red chilies short -7 nos
Dry red chilies long -12 nos
Coriander seeds -2 tbsp
Cumin seeds -1 tsp
Poppy seeds -2 tsp
Fenugreek -1/2 tsp
Ajwain(oama) -1/4 tsp
Mustard -1/4 tsp
Peppercorns -5 nos
Turmeric powder -1/2 tsp
Cardamom -4 nos
Cinnamon -2 inches
Cloves -6 nos
Bay leaves (thike pan) -3 nos

(2) coconut -1/2

(fry in little oil with 3 twigs of curry leaves and 5 flakes of garlic smashed, turmeric powder 1/2tsp till smells good)

(3) To cook meat

Onion -2 nos (cut finely)
Ginger -1.5 tbsp (chopped)
Tomatoes -3 nos (cut finely)
Garlic -10 nos (smashed)
Curry leaves -3figs

METHOD

Cook meat with masala (3) with salt. Add powdered masala or ground masala. Add lemon juice and cook till done. Add fried coconut, give a boil.

Season with ghee

1nos ONION,
2 twigs of CURRY LEAVES
GARNISH WITH CORIANDER LEAVES

NOTE:
In case of chicken, first tenderize the masala (3) in ghee then add chicken and the ground masala, lemon salt and cook.
