GERKINS CASHEW UPKARY

Gerkins-1kg
Green chillies- 6no(slit)
Onion-2no(sliced)
Coconut-3-4heaped tbsp(grated)
Cashew-100gms
Sugar-optional(1/2tsp)
Salt- To taste

Wash and cut gerkins lengthwise into four pieces. Cook with the above given ingredients except coconut in little water (about 1/4 fo a cup) till fully done, then add fresh grated coconut, give a boil.
keep it aside.

For seasoning

Coconut oil-2 tbsp
Mustard-1 tsp
Urad dal-1 tsp
Curry leaves-2 figs

Heat oil, add mustard, then add urad dal and curry leaves, fry till dal becomes golden brown .pour over the cooked gerkins close the lid.
