Pork - 1kg
(debone and cut in to 1/4th inch thick slices)
Salt - as required

Masala to grind:

Onion - 200 gms
Ginger - 2 inches
Garlic - 5 big flakes
Long red chilies - 8 no
Cumin seeds - 5 gms
Turmeric powder - 3 gms
Raisins - 25 gms
Dates - 20 gms(deseed)
Cloves - 7 no
Cinnamon - 2-3 inches
Pepper - 4no (optional)
Tamarind - small marble size


Cut pork wash and apply salt and little turmeric powder in sufficient quantity .keep for about 2 hours.

Grind masala to fine.

Fry pork pieces till golden colour without oil.

Take about 3tbsp fat from the fried pork and fry the ground masala for about half an hour or till the oil oozes out from the masala.

Now add water till the gravy is thin .add fried pork pieces and cook till tender (can add hot water if pork is not cooked) When pork is fully cooked add sugar, salt and vinegar (as required)

Cook for another 5 minutes.
