PORK VINDALOO

Masala (1)

Red chilies short ---4nos
Red chilies long------12nos
Cummins seeds ------1tsp
Mustard seeds -----1/4tsp
Poppy seeds -------1tsp
Raw rice -------1.5tbsp
Pepper cons -------4nos
Cloves -----------5nos
Cinnamon --------4inches

Masala (2)

Vinegar ----2tbsp
Tamarind -----1seed size
Garlic -----1 pod medium size
Raisins -----10nos

broil each masala separately

Step 1
Cook pork in salt and drain. Fry this cooked pork on a tava, and keep aside. (Keep leftover fat aside, you will need this to fry Onion later)

Step 2
Grind the broiled masala (1) with masala (2) to fine.

Step 3
Cut 4 medium size onions into fine. Use fat from step 1 to fry onion, fry until the onions turn brown. (Be careful not to over-brown or it will have a burned taste.), and then fry the masala for about 10 minutes.
Add the fried pork, pork boiled water, cook till tender. Can add sugar if
you want little sweetish .see that the end product is dry.
